Meatless Recipe of the Week : Stewed Chinese Eggplant

Stewed Chinese Eggplant 









Heres my first recipe in a little bit, but I have another one coming out soon, hope you enjoy this. 




Ingredients  yields 2 servings 


  • Chinese Egg Plant
  • Pepper
  • Salt
  • Garlic
  • Onion powder 
  • Paper towel
  • 1/2 cup of Leftover pasta sauce ( garlic tomato sauce seasoning to your taste) 
Directions 

  1. Clean, cut and place on parchment sheet
  2. Cover with paper towel 
  3. Cover for 30 minutes
  4. Pat off excess moisture
  5. Season to taste (remember sauce is already seasoned )
  6. Add to pot with sauce and cook with cover on for about 10- 15 minutes or when translucent.
