Stewed Chinese Eggplant
Heres my first recipe in a little bit, but I have another one coming out soon, hope you enjoy this.
Ingredients yields 2 servings
- Chinese Egg Plant
- Pepper
- Salt
- Garlic
- Onion powder
- Paper towel
- 1/2 cup of Leftover pasta sauce ( garlic tomato sauce seasoning to your taste)
Directions
- Clean, cut and place on parchment sheet
- Cover with paper towel
- Cover for 30 minutes
- Pat off excess moisture
- Season to taste (remember sauce is already seasoned )
- Add to pot with sauce and cook with cover on for about 10- 15 minutes or when translucent.
