Meatless Day of the Week Recipe ( Kimchi)
First off how is everyone!

Okay so I made Kimchi since we are ordered to stay in . I was like why not? It turned out great. Now I have made so many pancakes I should stop eating them after this is over lol . I used a slightly modified recipe from Maangchi. Heres what I did below.

Ingredients
- Napa cabbage
- Red pepper flakes ( Korean)- ( 5 tbs)
- Daikon Radish -1
- Carrot-2
- Onions -1/4
- Rice flour- 1/2 cup
- Salt ( few sprinkles)
- Garlic ( whole clove)
- Ginger ( half of one)
- Green onions ( four)
- Water ( 1 1/2 cup)
- Fish sauce( 2 tsp)
- Sugar ( 1/4 tsp)
- Soy ( optional) A few dashes
*this is for 2.5lb of cabbage*
Steps
- Cut up a cabbage in cubes and salt with about a cup or water. Turn every half hour for about two hours.
- Mix in a pot water, and rice flour and stir until its like a porridge. Then sit it aside.
- In a blender mix garlic, ginger, onion and fish sauce and ( soy if you want) Mix and add red pepper flakes then put aside
- Cut up daikon, green onion and carrot into match sticks.
- Add all together
- Done! now put it in airtight containers.
It turned out so well. I thought it would be a lot of work. I was very skeptical but I think 3-5lbs is my limit and I'm okay with that lol I like to enjoy somethings made for me and some things I try myself.
