Meatless Day of the week recipe: Ragu

I do know that ragus have meat in it but for those who have a meatless day of the week as I do, adding a list of veggies, with some other ingredients will make your ragu worth wild. If you are a meat eater, check out the other blog that is the exact same but has meat in it. Enjoy! 

Veggie Ragu

2-4 servings

Ingredients
  • 1 Onion
  • 1 1/2 Peppers(green, orange, yellow)
  • 2 Habanero, Serrano, Jalapeno peppers
  • 2 cloves of Garlic
  • 1/2  cup of Mushrooms
  • Carrots
  • 2 tbs Olive Oil
  • 2 Eggplant( I use Chinese) 
  • 1 can Tomato sauce
  • 1 can Tomato paste
  • 1 can Tomatoes cut into cubes or diced
  • 1lb Pasta of your choice
  • Pepper
  • Salt
  • Optional Seasonings of your choice
  • Bay leaf
Directions 
  1. Above are optional igrenents, feel free to add your favoirtes in diced and over medium/low here to simmer until tender.
  2. Don't forget to add the salt and pepper after the ragu is done The olive oil is together with the other ingredients. 
  3. Add tomato ingredients ( all three or one of the above) to the mixture after 10 minents of simmering.
  4.  Simmer until veggies are tender.
  5. Cook pasta either before or after the ragu is completed.
  6. Serve together.
